Ingredients

  • 1 1/2 Cup – Sifted Flour

  • 1/2t – Salt

  • 1t – Baking Soda

  • 1/2t – Baking Powder

  • 2t – Pumpkin Spice Seasoning

  • 1/2 Cup – Veggie Oil

  • 1/4 Cup – Milk (we use almond but any milk is fine)

  • 1t – Vanilla Bean Paste

  • 2 Large Eggs ( make sure they are room temp.)

  • 1/2 Cup – Granulated Sugar

  • 1/2 Cup – Packed Brown Sugar

  • 12oz 100% Pumpkin

Directions

  • Preheat your oven to 425°
  • Combine flour, salt, baking soda, baking powder, and pumpkin spice and set aside.
  • Combine oil, milk, vanilla bean paste, eggs, and both sugars and mix until it is well combined. After combining the ingredients add your pumpkin and mix until it is well combined.
  • Add your dry mixture into your wet mixture. Mix it just enough for it to combine. You don’t want to over mix so mixing by hand is best.
  • After adding batter to you baking vessel; pop your muffins into the oven and bake on 425° for five minutes. Reduce the heat to 350° and bake the muffins for another 15 to 20 minutes.
