The Perfect Summer Cheesecake

With summer in full swing, there is nothing better than the decadent creaminess of a delicious strawberry cheesecake. I have been making this recipe since I was a child! It has always been a big hit with my family so I figure; why not share it with you all. I’m sure your family will enjoy it too!

Strawberry Cheesecake Ingredients

As with all things… What you put in, is what you will get out. While you may have to put a bit more effort in to get the perfect cheesecake; I promise you it will be worth it! Pre-made cream cheese has been the staple in this recipe for decades. With the food market the way it is here in America, I decided to challenge myself to making my own ingredients this time around. While I have not gotten into making my own vanilla extract, I did make this cheesecake with HOMEMADE CREAM CHEESE.

In the ingredient section, you will notice that I suggest all organic ingredients. I do this because I personally think that in most cases, organic is always best. When it comes to preparing food for my family, I always try to get the highest quality ingredients I can find. Farmers markets are in full swing allowing me to find everything I need to make this cheesecake with locally sourced ingredients. Although this is a strawberry cheesecake, I encourage you to add fruits your family enjoys most. Or… eat it plain!! Either way, this summer cheesecake is an absolute delight and also makes for the most decadent fruit dip. This really is the perfect summer cheesecake!

Recipe Flexibility

With a recipe this flexible and forgiving anyone can make the perfect summer cheesecake successfully. If you are like me, you don’t like things to bee overly sweet, and with the use of sweetened condensed milk, the sweetness can be a bit much for some. I tend to use 12oz of cream cheese to keep things balanced. If you enjoy your confections on the sweeter side of life, 8oz of cream cheese will be equally enjoyable. The amount of lemon you add is also to taste. While you do need the acid from the lemon to firm your cheesecake; you’ll want to taste as you add the lemon juice to ensure the flavor is to your liking. Start by adding 1/4cup and slowly increase until you get your flavor just right.

Indulge in our homemade strawberry cheesecake, the perfect treat for summer. This luscious dessert features a creamy, velvety cheesecake filling atop a buttery graham cracker crust, all crowned with a generous layer of fresh, juicy strawberries. Each bite is a delightful blend of rich, tangy, and sweet flavors, making it an irresistible addition to any summer gathering. Enjoy each slice of pure summer bliss!

Ingredients

  • For Filling
  • 12oz – Organic Cream Cheese (softened)

  • 1 Can – Sweetened Condense Milk

  • 1/4 Cup – Organic Lemon Juice (freshly squeezed)

  • 1 Tbsp – High Quality Vanilla

  • 1 tsp – Lemon Zest

  • Topping + Crust
  • 1 – Grahamcracker Crust

  • 1 lbs- Fresh Strawberries (or your favorite fruit)

Directions

  • Wash your fresh fruit! Zest one full lemon and slice your strawberries into the thickness you prefer. Now is also a great time to juice a lemon or two.
  • In a medium to large mixing bowl, combine softened cream cheese until smooth.
  • Add vanilla extract, lemon juice, and zest to cream cheese mixture and combine. Taste mixture and add small amounts of lemon just if needed.
  • Once Combined, add filling to a your crust. Add sliced strawberries to the middle and top of your cheesecake ( you may have some leftover) Cover and leave to chill for at least 3 hours.
  • Slice and Enjoy!

Notes

  • While 3 hours will give your cheesecake time to chill and harden. Allowing it to rest for 24 hours will give all the flavors time to meld together. Making for an even more delightful experience.
